"An exciting new cuvee this year...made from 100% Gamay del Trasimeno (remember, that's a local version of Grenache) made with a unique method of semi-carbonic maceration that Danilo has been researching and working with that involves covering the fermenter in a simple clay-like paste with partial whole clusters and a brief 2 days on the skins.  Called "VivO'' because of its liveliness and crisp acidity this is a super fun summertime red.   I like to call this one a "Cote du Trasimeno".  Chill it down and drink it up!"

Tasting notes: Medium body, volcanic soil, sour cherry, dark chocolate, tannic and juicy, 100 year old vines.

No chemistry in the vineyard, no technology in the cellar, natural wine,’ says Danilo Marcucci in summing up his wines at Conestabile della Staffa. For more than 200 years from the 1700s, Conestabile della Staffa produced some of the finest wines in the region but with two world wars came a diminished farming workforce and from 1956, the estate ceased to make anything, forcing the vineyard to sell off their grapes each year over the subsequent decades to make other people’s wine... and then Danilo came along. Former student of architecture and one-time Umbrian wine-seller, Danilo turned to natural winemaking in the early 2000s after discovering first-hand what the chemicals in industrially produced wines can do to the body. Named Amare in ode to the amarena cherries it smells reminiscent of in the glass, this wine sees Danilo marry the rich, dark red fruit notes of Colorino with the more savoury, earthy notes of Sangiovese to create what can only be described as a Black Forest Gateaux of a wine, without the creamy sweetness. Fully natural and unfiltered, made with wild yeast and no added sulphites, this red may look dark, heavy and rich in the bottle but like all Danilo’s wines, it is easy-drinking and juicy from beginning to end.
