Now this is something else coming out of Georgia, wow. Where normally a red wine gets it’s color from maceration on the skins, in the case of this Budeshuri Saperavi it’s the flesh of the grapes that’s red. Normally this creates supe intense wines, but this winemaker is focused on keeping it quaffable. So the wine is pretty much immediately pressed after arriving in the cellar and when normally this will create a white wine, this is a red. It’s so luscious, refreshing. Light and peppery but with loads of fresh acidity and black cherry, a delight!
