100% Trebbiano Spoletino. From biodynamically farmed, certified-organic, hand-harvested estate fruit. Fermentation occurs with native yeasts in open-topped tanks with no temperature control and no sulfur. Maceration with skins is approximately 24 hours. The wine is pressed and aged on its fine lees in stainless steel for several months. It is racked, bottled and finishes fermentation in the bottle. It is not filtered and is topped with a crown cap. Laetitia Bullarum is a zero-sulfur wine.
