savory, crisp, distinctive, vegetal and herbal, Christmas spice, medium bodied, gentle bubble, Personality: the name says it all! This is a textbook example of a great pet-nat: aromatic, buzzing with life, great citrus acidity and it’s so drinkable that the bottle will be gone before you say Splash. dry finish, Green apples, lemons, pears, textured on the palate. This bubbly has notes of lemon and lime, The palate is crisp, zesty, and refreshing. wet stone. and yellow flowers and crisp, clean finish.
Chateau Barouillet has been a family business going back at least 8 generations. Vincent Alexis works alongside his father and grandfather to cultivate the land and has pushed the winery into Organic viticulture, starting to convert the soil in 2010 and fully converting all the vineyards by 2014. The domaine controls 45 hectares of vines throughout Monbazzillac, Bergerac Pécharmant, and Cotes de Bergerac.
Grapes: Sémillon
Vineyard: 30 yo vines on clay
Making of: Grapes are destemmed and direct pressed into stainless steel tanks where they ferment at a cold temperature for about 1 month. The wine is transferred to bottles just before fermentation is complete to finish fermenting as a pet-nat. The wine is not disgorged and has zero sulfur added.
This wine, to be served well chilled, can be drunk on its own, unaccompanied. It's a festive, aperitif wine, for drinking with friends in summer. It can be drunk at any time of day or night. It goes very well with seafood, Serrano ham in chiffonade, scallop ceviche or Coeur de Neufchatel.
Natural sparkling method. Direct pressing and indigenous yeast fermentation in stainless steel tanks. Light earth filtration when sugar equilibrium is reached, to avoid disgorging. Bottled after filtration, as soon as the wine begins to ferment again. End of fermentation in horizontal bottles, followed by 5 months' bottle ageing.

Located 50 km east from Saint-Émilion, the Barouillet family has been growing grapes for at least 8 generations in Pécharment, Monbazillac and Bergerac. Vincent Alexis, who joined his father in 2010, converted the vineyards to organic and is about to obtain the biodynamic certification.
This splashy Pét-Nat is made from 50 year old Sémillon vines grown in clay and limestone soils.
