This is the type of Pet'Nat that I've been looking for that I want to drink all year. Made from a very seldom seem grape called "Raboso." This rosé leans more on the red side which is why I'd recommend it anytime of the year. The grapes are destemmed, then macerated for about 60 hours, then pressed gently. The must ferments spontaneously without added yeasts, and takes place partly in steel and partly in barrique. The result is a sour kirsch cherry goodness with a silky mouthfeel that exudes freshness.
Very small production from Maria Gioia Rosellini at Ca' Orologio. I love the hazy, dark pink in color, it's unfiltered and looks like a beautiful glass of pink lemonade. Biodynamic and one to drink all the time.
