Moreau-Naudet's holdings in Vaillons are around 1.7 hectares of 35-50 year old vines.

Moreau-Naudet has been forging its own path in Chablis since the 50’s. Low intervention, minimal oak usage and a focus on terroir was a pioneering approach at the time. Third generation winemaker Stephane Moreau continued the family traditions with the aid of  his wife and assistant winemaker, Virginie. Even though Stephane passed away in 2016, the force behind the wines has continued to grow through Virginie, who has taken the reins of this domain in Chablis, steering it with elegant control. Farming is completely biodynamic, something seldom seen in Chablis. 

Stéphane Moreau’s vision is continued by his wife Virginie, whose lifted, Dauvissat-style wines stand out amongst the new generation of Chablis producers. Her 1er Cru ‘Vaillons’ is great now but clearly has cellar potential too, taut zesty and refreshing, crunchy stone fruit, tart citrus, flint, and wet rocks,

"Wafting from the glass with attractive aromas of pear, orange zest, white flowers and freshly baked bread, the Chablis 1er Cru Vaillons is medium to full-bodied, with an elegantly satiny attack that segues into a layered core of bright fruit, concluding with a saline, perfumed finish."

farming/cellar: indigenous yeast, followed by a long maceration on lees. The wine is then aged for an average of 18 months (varies according to the vintage) on lees in a combination of stainless steel and 600-liter French oak barrels of which only 20% is new. (Most of the wine is aged in stainless steel, with around 2/3 in steel and 1/3 in oak.).
