Fresh and mineral driven, this has a light and crisp palate with notes of Meyer lemon, green apple, pear and sea spray. It is perfect for the last days of a sunny autumn, to add zest and lift to whatever you may be cooking (perfect drinking while cooking wine), or with oysters and fresh raw veggies. This is some serious Muscadet, delicious tonight but could also be cellared for a few years!
Domaine de la Pépière is one of the top estates in the Muscadet (helmed by Mark Olivier).
3-hectare lieu-dit in the cru of Château Thébaud. These vines are the estate's oldest plot, planted from massale selection 60-70 years ago. The sandy clay soils are rich in granite de Thébaud, a type differing from granite de Clisson in its higher feldspar and clay content; it is cooler, holds water well and ripens the fruit more slowly.

farming/cellar: certified organic, biodynamic, harvests by hand and makes wine naturally, with zero pesticides, ambient yeast, extended lees aging, and minimal intervention in the winemaking process (which is rare in Muscadet). fermented in steel, then aged on lees in glass lined cement tanks for 7-8 months.
