70% Cabernet Sauvignon with a 30% blend of Mourvedre, Pinot Noir, Sauvignon Blanc, Petit Manseng, and Muscat (all hand harvested)
-Cabernet is sourced from younger vines in the estate. "Free run" juice is fermented in closed steel tanks to capture the co2 and providing the wonderful fizz (this is Charmat method, not traditional/Champagne method). The result is a lighter, fresher bubbly akin to a nice Prosecco.
