The Riesling really shines through with bright acidity, balanced by a earthy tones, beautiful texture, crunchy orchard apple fruit and quince. only ~160 cases made.
Via The Importer:
"Inspired by natural winemaking from regions like the Loire and Beaujolais, Fossil & Till focuses on a minimalist approach to winemaking in the Finger Lakes: native yeast fermentation, no additions of acids, sugars, or enzymes, little to no fining or filtration, and minimal additions of sulfur."
"This wine is a pétillant naturel- a traditional method used to make sparkling wines that predates the Champagne method."
100% Riesling. Sourced entirely from the Northern part of Standing Stone Vineyards. Planted in the "banana belt" on the eastern shore of Seneca Lake, this 5-acre Standing Stone site sits in a warm microclimate on well drained silt loam soils, called Honeoye. Whole-cluster pressed and then went through spontaneous fermentation with no temperature control. It lasted from 10/23 to 4/21 until it was racked out of its primary fermentation tank and bottled on 4/22. No added sulfur. 163 cases made.
Would be great with some spicy pad Thai.
