Not your typical Crémant, Stéphane uses some Vin de Paille (concentrated wine made from dried grapes) to kick start the secondary fermentation in this Chard, Pinot Noir, Poulsard, Trousseau blend. Salty toasted nuts, dried apricot, and honeycomb dance upon my palate. Complex yet eminently drinkable. Pair with fried chicken.
