displays darker hued ruby color, medium intensity, juicy blood orange, black cherry, subtle smoky notes, medium bodied and supple but still great with a slight chill, cleansing acidity, soft tannins. great red for Jura fans.
region: Corsica, France
varietal: A blend of 25 % Minustellu, 25% Carcaghjolu Neru (both local, oft overlooked grapes), and 50% Niellucciu, all sourced from the Ravagnola vineyard.
style: light red
farming & cellar: fermented and aged in stainless steel. Carcaghjolu Neru: 15 day maceration half destemmed half whole cluster with light daily pumpovers. Minustellu: same but all destemmed. Niellucciu: direct press and vinified like a rose before blending with the other two. After blending, aged one year in tank.
pairing: Civet de sanglier (Wild boar casserole) Arguably, the signature dish of Corsica. This is a rich, hearty casserole with the “gamey” flavour of boar, mixed with onions, carrots, garlic, chestnuts, fennel and generous quantities of eau de vie and, of course, red wine forms a fundamental part of the recipe.
