Karina & Guillaume Lefèvre met hiking across Corsica fell in love and started a certified biodynamic winery in Provence. This limited bottling comes from younger vines in a single vineyard with sandstone & clay soil atop a limestone bedrock.
A ridiculously gulpable wine that would convince any Grenache naysayers that this variety can be lifted, bright and nuanced. It's L'Anglore-esque, but at 1/4 of the price and with a bit of Syrah to add complexity and spice.
region: Provence, France
varietals: 70% Grenache, 30% Syrah
style: red
farming/cellar: certified organic/biodynamic. Hand harvested, ambient yeast. First pass of vineyard for the best fruit is done whole cluster into concrete. Second pass is direct press and poured over the whole clusters. This process results in what is called infusion - something akin to carbonic maceration. This lasts 15 days. Minimal so2 is added (only at bottling) and it is volcanic sulfur. Grenache matured in concrete eggs, Syrah matured in demi-muids (large neural French oak vessels). Bottled unfiltered.
pairing: country organic roasted chicken and root vegetables
