the original upcycle, piquette is a low ABV type of wine that is made by rehydrating grape pomace (skins/seeds/the pulp leftover from the production of red wine), the yeast and remaining sugar continue to ferment, creating a second wine that retains quite a bit of the phenolic flavor. A splash of grape juice is added before canning, prompting a "can conditioning" which creates a natural haze and light effervescence.
