the original upcycle, piquette is a low ABV type of wine that is made by rehydrating grape pomace (skins/seeds/the pulp leftover from the production of a typical wine), the yeast and remaining sugar continue to ferment, creating a second wine that retains quite a bit of the phenolic flavor.
From directly-pressed Albariño pomace grown in Santa Barbara County California, the winemaker rehydrates the pomace with mineral water and before canning doses the low-ABV Albariño-skin-juice with some grape juice & champagne yeast to prompt a "can-conditioned" secondary fermentation inside the sealed can, resulting in a lightly effervescent beverage upon cracking open.
