Bebida Morada, aka “Purple Drink”.
A distinctive co-fermentation of two Iberian grape varieties: 70% Mencia, a red grape, and 30% Arinto, a white grape. The grapes were 100% de-stemmed and fermented together in a large stainless steel tank with daily pump-overs for approximately two weeks.
We rely on native yeasts and bacteria for both primary and secondary fermentation, avoiding the use of sulfur during harvest. Once the wine had completed fermentation, it was pressed to a tank, settled, and then racked to barrels the following day and then aged in neutral French ok barrels for 10 months. In line with our minimalist (lo-fi) philosophy, we only add a total of 30 ppm SO2, and the wine is bottled unfined and unfiltered.
