Wild Nature Wines, Prosecco Col Fondo Unfiltered Frizzante (NV)
Wild Nature is a project of the Fidora family who has farmed grapes organically since 1974. They were the first estate to be certified in the Veneto and have been farming organically for over 40 years. The estate makes all of their own Biodynamic preparations and this approach mirrors their commitment to biodiversity on their estate.
100% estate farmed, certified organic, practicing Biodynamic Glera grapes. Second fermentation occurs in bottle with Glera must from the vintage. Yeasts are from estate pied de cuvee. Not disgorged with zero dosage and sealed under crown gap. No sulfur added until bottling. Certified Vegan.
The absolute most delicious Prosecco I've ever tasted. Palate cleansing, refreshing, lively, clean for Col Fondo, citrus, green apple, a real gem! I was guzzling this like it was water at our most recent Speakeasy wine dinner.
Herrenhof Lamprecht, Sand & Kalk Pinot Blanc 2019
Godfrey Lamprecht purchased 9 hectares of hillside that once belonged to Vorau Abbey. Monks farmed vineyards on this hillside as recently as the late 19th Century. As all of the vineyards had long since been uprooted, Godfrey and his family replanted 1 hectare of vineyards per year. The soils are composed of calcareous sandstone. Organic farming is practiced following a term he call Freestyle Farming, with extensive use of cover crops and manual harvests. In the cellar minimal intervention is the norm with all wines fermented on natural yeast in seasoned barrels, most of which are sourced from his local Forrest. All the wines are bottled unfined and unfiltered with minimal sulfur.
Sand and Kalk Pinot Blanc is a great place to start in the world of Herrenhof. The grape is ideally suited to the calcareous and sandstone soils. The wine is macerated for a short 6 hours on the skins, is fermented with natural yeast in 600L oak barrels. Bottled unfiltered with a small addition of SO2.
An elegant Pinot Blanc with texture, exotic fruit and florals but still eminently food friendly.
pair with braised pork smothered in pumpkin seed oil and freshly grated horseradish.
Herrenhof Lamprecht - Blaufrankisch Buchertberg Rot 2018
Grape blend: Gemischter Satz (red field blend): Blaufränkisch dominant with smaller amounts of St Laurent, Kadarka, Pinot Noir and Blauer Wildbacher
Light bodied, great lift, bruised cherries, hints of spice and damp earth.
Pair with Chicken under a brick, with Chanterelles in a Madeira sauce
